Next week is St. Patrick's Day. It's time for shamrocks, leprauchans, and rainbows leading to pots of gold. It's also a time for delicious food so I thought I'd look through my list of recipes that are already on the blog and see what would be appropriate for St. Patrick's Day.
I may not have a lot of traditional Irish recipes (yet) but I've got plenty of dishes that are green or potato-based. So here are my lucky 7 favorite recipes that would be delicious additions to your St. Patrick's Day menu:
Cheesy Potato-Okra Corncakes that are crispy on the outside, creamy on the inside. Served with a side of sauteed Cabbage and Collard Greens.
This is a recipe I make again and again. Old Bay seasoning and kelp flakes help make a vegan “fish” that is crunchy on the outside, tender and flaky on the inside. The chips are crispy and flavorful and the tartar sauce is perfect for dipping.
My bright and verdant Anything Goes pesto combined with creamy potatoes and stuffed into a crispy-skinned baked potato is fun, different and delicious.
One of my favorite tofu scramble recipes - filled with bright, fresh herbs. What a fresh, green and healthy way to start the day!
My vegan version of Bitchin' Kitchen's Nadia G's recipe. The Sartu was creamy and decadent. Creamy potatoes mixed with spicy Italian sausage crumbles and cheese, green spinach in the middle, a gooey layer of Monterey Jack cheese and crispy browned topping. It is indulgent and amazing.
The seitan cutlets are soft and tender with a crispy potato crust. You get your entree and side in one outstanding combination. If you're a wheat-meat and potatoes lover, this is for you!
My most recent recipe on the blog. No need to be green with envy when my Zucchini Linguine lets you eat all the pasta you want guilt-free! Sauteed in garlic and oil with a hint of red pepper flakes, this dish is amazing!
