VeganMoFo: "Z" is for Zucchini Banana Chocolate Chip Muffins
The "V" Word completes its celebration of VeganMoFo, the month of Vegan food, with the last letter of the alphabet. "Z" is for Zucchini Banana Chocolate Chip Muffins.
It seems only fitting that we end VeganMoFo the way we started it - with muffins and another attempt on my part at baking. These muffins are gluten-free and delicious. Healthy zucchini, sweet banana and indulgent chocolate chips. Yum!
With my Zucchini Banana Chocolate Chip Muffins, the circle is complete! I can't believe the whole month is over already. It was a ton of work but so much fun. At first I wasn't sure I could do it but having the alphabet theme really helped me focus on what I wanted to make. This month I discovered a bunch of great new blogs, new International dishes, won a giveaway, was honored with 3 Liebster Awards, and cooked up a storm!

Zucchini Banana Chocolate Chip Muffins
Ingredients
1/2 cup brown rice flour
1 cup garbanzo/fava bean flour
1 tsp. salt
1 tsp. baking powder
¼ tsp. baking soda
1 tsp. cinnamon
1 tsp. nutmeg
2 Tbs. ground flaxseed + 4 Tbs. water
¼ cup vegetable oil
¼ cup unsweetened apple sauce
¾ cup raw brown sugar
1 tsp. vanilla extract
1 cup zucchini, grated and squeezed dry
1 banana, mashed
¼ cup chocolate chips
Directions
Preheat the oven to 350 degrees. Grease a muffin tin with oil or cooking spray.
Mix the flaxseed with the water until it’s a loose paste. This is your binder.
Mix the dry ingredients (first 7 ingredients) in a large bowl. In another bowl, mix the flaxseed/water, oil, apple sauce, sugar, and vanilla. Add the zucchini and the banana to the wet mix.
Add the dry ingredients to the wet and mix until the batter is smooth. Then add the chocolate chips into the batter.
Fill the muffin tin about ¾ of the way since the muffins will rise. Bake for about 25 to 30 minutes until a toothpick comes out clean.
Let the muffins cool in the tin and then put them on a cooling rack. Enjoy!
